For 5 US gallons

4 lbs Pilsner 
4 lbs White wheat
4 lbs pineapple
4 lbs coconut
0.25 oz Amarillo @FWH
0.25 oz Amarillo @ 15

0.5 Wyeast yeast nutrients

Wyeast 5335 Laco
Wyeast 1275 American Ale II

OG 1.040
FG: 1.008

Boil time: 60 minutes

Primary Fermentation: 6 days at 90 F
Secondary Fermentation: 7 days at 69 F
Tertiary Fermentation: 14 days at 69 F

Single infusion mash at 150 F 
I created a lacto starter using WY5335 and cultured it for 5 days.  I collected 6 gallons of initial wort, pitched the lacto starter and let it sour for a week, keeping it warm at 90 F.  Once the wort was nice and tart, I teturned it to the kettle and proceeded with my boil schedule and fermented for a week using Wyeast 1272.  I then racked to secondary with the pineapple and coconut for 2 weeks.
