14.0 lb Pale 2-row malt
1.25 10 L crystal malt
1.0 lb dextrin malt
0.5 lb CaraVienne malt
1.0 oz Amarillo pellets @ mash
0.25 oz Columbus pellets @ 60 min
0.25 oz Northern Brewer pellets @ 60 min
0.40 oz Magnum pelless @ 60 min
0.50 oz Warrior pellets @ 60 min
0.20 oz Simcoe pellets @ 60 min
0.40 oz Crystal pellets @ 30 min
0.25 oz Centennial pellets @ 30 min
1.0 oz Simcoe pellets @ 30 min
2.0 oz Amarillo pellets @ 0 min
2.0 oz Simcoe pellets @ 0 min
2.0 oz Amarillo pellets @ dryhop
4.0 oz Simcoe pellets @ dryhop

16.5 g chopped habanero peppers @ dryhop

WLP001 American ale yeast
CO2: 2.4 vols

Original Specific Gravity: 1.074
Final Gravity: 1.016
Boiling Time: 60 minutes
Primary Fermentation: 21 days at 64 F
Secondary Fermentation: 7 days at 68 F

Directions:
Use a water profile that includes 165 ppm Ca, 12 ppm Mg, 17 ppm Na, 300 ppm CaSO4, and 55 ppm Cl.  Mash at 155 F for 75 minutes.  Dry pepper with 3 g of chopped habanero peppers per gallon for 5 days.
